I confess up front that I am no Curtis Stone… however i do embrace cooking like anything else in life. There is no right nor wrong, only a good go at it.
This avo I have made the following:
1. Gluten free lazagna:
Ingredients:
- hormone free mince 1kg
- 1 bottle of organic tomato pasta sauce (or anything similar)
- 1 chunk of ricotta
- 1 batch of frozen spinach
- mozarella cheese
- rice noodles or rice (or nothing if you are trying to lose weight)
a. boil mince. cover mince with water and boil until it has changed colour, add sauce.
b. arrange in layers in a deep baking dish. I usually go meat, spinach, meat, ricotta, noodles, meat, cheese
c. reheat on 200 degrees for 30 mins.
2. Pumpkin and parsley soup
ingredients
- 1/2 pumpkin
- 2 carrots
- 1/4 bunch parsley
- 1 Tbs ginger
Chop and all to a saucepan and cover with water. Cook till ingredients soft. Mash with Bamix till soup consitency.
3. Chicken and herb mince balls
Ingredients:
- 1 kg hormone and free range chicken mince
- 1 chunk of fetta
- 1 handful of herbs: parsley, corriander, dill
- 1/2 cup of chopped sun dried tomatoes
Mix all together and then roll into little balls and place on a tray at 200 degrees for 20 minutes. These are wonderful for breakfast (all you blood group Os).
